For every kilogram of fresh mushrooms sold in the pink packages from September 15 to November 15, a contribution will be made to the Breast Cancer Society of Canada. Look for fresh mushrooms packed in pink trays with a pink ribbon on the top.

The link between mushrooms and Breast Cancer has been reported by Dr. Shiuan Chen of the City of Hope Cancer Centre in Los Angeles. His team of scientists have identified anti-tumour elements in fresh mushrooms. Mushrooms contain Conjugated Linoleic Acid and CLA suppresses a natural substance in the body called aromatase. By blocking aromatase, physicians can reduce the levels of circulating estrogen in post-menopausal women. That is important because, according to the Canadian Cancer Society, high levels of estrogen are associated with a higher risk of breast cancer. White button, portabella, crimini and Shiitake mushrooms showed significant inhibitory effects with large mushrooms having the strongest activity. Furthermore, there is an emerging body of science suggesting that higher intakes of Vitamin D may be protective against breast and other cancers, and mushrooms are the only fruit/vegetable with natural Vitamin D.

Serve Mushrooms Cold
Simply wipe fresh mushrooms with a damp cloth, cut into bite-sized pieces or keep whole, and serve with dips, in salads, or as a garnish to your mushroom entreés.
Microwave Mushrooms (2-3 Minutes)
Cooking mushrooms in the microwave works extremely well. Use whole button or thickly-sliced mushrooms. Put seven to eight ounces (200g to 227g) in a microwavable bowl; cover and cook on HIGH for two to three minutes, stirring once. There is no need to add butter or oil. In a few minutes you will have great tasting, cooked mushrooms.
Grilling or Broiling Mushrooms (4-8 Minutes)
This technique usually works best with large cap mushrooms such as Portabellas, Shiitakes and Jumbo Whites. Brush the caps and stems with oil to keep them moist, and season with salt and pepper. Grill or broil for 4-6 minutes on each side, brushing with more oil once or twice while cooking.
Roasting Mushrooms (20 Minutes)
To get perfect roasted mushrooms, place them in a shallow baking pan, toss with one tablespoon of oil and roast in a 450°F oven, stir occasionally. Roast the mushrooms until they are brown and fragrant.
Seasoning Mushrooms
Mushrooms are easy to season, the same as meats and other vegetables. Virtually any seasoning will go well with mushrooms, so you can enjoy them any way you like.
Freezing Mushrooms
Fresh mushrooms do not freeze well as they are made up of over 90% water. If you wish to freeze fresh mushrooms they must be lightly sautéed first. Heat 1 tbsp of cooking oil in a hot pan, add mushrooms, and sauté for 2-3 minutes until mushrooms are tender. Remove from heat and allow the mushrooms to cool completely. Once cool, transfer mushrooms to a plastic container. Pushing the mushrooms to the bottom of the container and sticking a small piece of plastic wrap directly on top of the mushrooms will help prevent freezer burn, making sure the lid is on tight will also help to prevent freezer burn. Make sure to label the containers with the date. Frozen mushrooms can be kept up to one month. When ready to use your frozen mushrooms simply pop them out of the container and drop the frozen block into the frying pan. Add ½ tbsp of oil and sauté until mushrooms are warm. There is no need to pre-thaw the mushrooms.

He was a successful hairdresser with a thriving business. He traveled all over the world to work with powerful presidents and gorgeous models. But one day, his 15-year-old niece walked into his salon, crying. She tearfully begged him to stop her hair from falling out. His immediate thoughts were that it was not serious.
But when he saw the look in her father’s eyes, he knew it was something more. It turned out that she had just been diagnosed with leukemia. “Uncle Jeff, you know I’ve been trying to get on the gymnastics team all my life,” she cried. “My hair is going to be falling out when it’s time to try out.”
Although chemotherapy would help save her life, it would also leave her with no hair. “I promised her that she would have hair,” Paul says. “And when you make a promise to a kid, you keep it.”

Crunchy Portabella Fingers
Whip up this super easy after school snack or let everyone make their own. Watch out … the adults like them too!
Ingredients
| 2 cups | cheese or multi-grain tortilla chips about 2 oz (60 g) | 500 mL |
| 1/2 cup | light mayonnaise | 50 mL |
| 6 oz | pre-sliced fresh portabella Mushrooms | 180 g |
| (about 10-12 slices (½- ¾” (1-2 cm) thick) | ||
| Salsa or ketchup (optional) | 25 mL |
Method
- Place chips in the plastic bag; seal or tie with twist tie and place on the counter or table.
- With a rolling pin or the bottom of a mug crush the chips in the bag to make coarse crumbs. You can even pound them with your fists if you prefer.
- Open the bag and pour crumbs onto a large dinner plate; set aside.
- Brush or spread mayonnaise on sides of a mushroom slice.
- Press the mushroom slice into the chips; turn over to coat both sides.
- Place on serving plate; repeat with remaining mushrooms.
- Enjoy eating them with your fingers with paper napkins or serve on small plates; dab with salsa or ketchup and eat with knife and fork.
Makes 10 –12 slices
Variation: Substitute large pre-sliced fresh white mushrooms for portabellas.
French Mushroom Soup
Rough times in Windsor-Essex
The weather has not been kind to Windsor-Essex these past few weeks. This past weekend alone, a tornado touched down just off of County Road 10 causing an unbelievable blue sky, lit up with lightening bolts, touching down on every tip it can grab on the ground. Something I, personally, have never seen at that scale and so close to my vicinity.
As the bolts came down, a handful hit down on Vidmar Funghi property causing us to lose power. Due to extensive damage in the area, Hydro One, unfortunately could not get power back to over 100 homes, businesses, and others, that the expected time of arrival of electricity was pushed back as calls came in throughout the night. Due to lightening hitting the premises, some of our equipment got destroyed, but most of all, due to the heat, our growing rooms started taking effect.
Vidmar Funghi is still in the process of assessing the damage and will notify its customers of any delay of our product. We apologize for the inconvenience, and surly missed the opportunities of being present at the various farmers’ markets as this all evolved.
